The simplest way is to follow this guide. I develop Tigase on Mac OS X and I can confirm it runs quite well. But I can recommend it only for testing or development purposes.
I still couldn't figure out how to increase max number of open files per process. The default 1024 means you can handle max 1024 user connections at the same time. Perhaps if you are advanced Mac OS X person you can advise me how to solve the issue.
